Ingredients
- 60 g gluten-free rolled oats
- 50 g mixed dried fruit seeds and nuts (whatever combination you like)
- 60 g plain flour gluten-free blend
- 40 g ground almonds
- 40 g brown sugar
- 50 g butter
- 3 tbsp honey
- 8-10 fresh raspberries
Instructions
- Preheat the oven to 180oC and line a baking tray with greaseproof paper.
- Heat the butter and honey together over a low heat until the butter has melted.
- Put all the ingredients into a large mixing bowl and stir until it comes together into a soft dough.
- Put small spoonfuls of the mixture onto the baking sheet, leaving enough space for them to spread a little during baking.
- Bake for about 15 mins, until they are beginning to go golden on top.
- Leave to cool on a wire rack (still on the paper), then once cool, remove carefully from the paper and store in an airtight container.
