60 g gluten-free rolled oats 50 g mixed dried fruit seeds and nuts (whatever combination you like) 60 g plain flour gluten-free blend 40 g ground almonds 40 g brown sugar 50 g butter 3 tbsp honey 8-10 fresh raspberries
Preheat the oven to 180o C and line a baking tray with greaseproof paper.
Heat the butter and honey together over a low heat until the butter has melted.
Put all the ingredients into a large mixing bowl and stir until it comes together into a soft dough.
Put small spoonfuls of the mixture onto the baking sheet, leaving enough space for them to spread a little during baking.
Bake for about 15 mins, until they are beginning to go golden on top.
Leave to cool on a wire rack (still on the paper), then once cool, remove carefully from the paper and store in an airtight container.
