Watermelon gazpacho recipe without tomatoes
The watermelon gazpacho is the perfect way to beat the heat with the sweet, juicy flavors of ripe watermelon. This summer cold soup is a delightful twist on the classic gazpacho. It balances the sweetness of watermelon with tangy, savory flavors. This appetizer is also easy to make, just like preparing the Watermelon Agua Fresca.

The traditional gazpacho recipe includes tomatoes as a key ingredient. However, for this recipe, I remove the tomatoes to highlight the refreshing and sweet qualities of watermelon. This aims to create a lighter and fruitier soup for summer.
This light appetizer can be served in chilled shot glasses, mini watermelons, or bowls with mint and olive oil. You can turn it into a main course by pairing it with crusty bread, grilled shrimp, or avocado toast. It also complements grilled veggies, seafood, mezze spreads, or charcuterie boards.
Gazpacho watermelon can transform into refreshing frozen desserts. You can freeze it into popsicles, granita, or blend with yogurt for a tangy treat. For drinks, try blending it into Gazpacho Margaritas, Watermelon Gazpacho Martinis, or Virgin Gazpacho Spritzers.
