Ingredients
  

  • 1 cup fresh strawberries hulled
  • 1 tablespoon sugar optional, for added sweetness
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chilled sparkling wine or champagne
  • Crushed shortbread cookies for garnish
  • Whipped cream optional, for garnish

Instructions
 

  • Blend the fresh strawberries with sugar (if using) until smooth. Strain through a fine mesh sieve to remove seeds for a silky texture.
  • In a small bowl, mix the heavy cream and vanilla extract until combined. Add this to the strawberry puree and gently stir to create a creamy mixture.
  • Pour the strawberry cream puree into two champagne flutes, filling them about 1/3 full.
  • Slowly pour chilled champagne or sparkling wine into each flute, filling to the top. Stir gently if needed.
  • Sprinkle crushed shortbread cookies on the rim or top of each mimosa. Optionally, add a dollop of whipped cream for extra indulgence.
  • Serve immediately while bubbly and fresh!
