- 1 cup fresh strawberries hulled
- 1 tablespoon sugar optional, for added sweetness
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1 cup chilled sparkling wine or champagne
- Crushed shortbread cookies for garnish
- Whipped cream optional, for garnish
Blend the fresh strawberries with sugar (if using) until smooth. Strain through a fine mesh sieve to remove seeds for a silky texture.
In a small bowl, mix the heavy cream and vanilla extract until combined. Add this to the strawberry puree and gently stir to create a creamy mixture.
Pour the strawberry cream puree into two champagne flutes, filling them about 1/3 full.
Slowly pour chilled champagne or sparkling wine into each flute, filling to the top. Stir gently if needed.
Sprinkle crushed shortbread cookies on the rim or top of each mimosa. Optionally, add a dollop of whipped cream for extra indulgence.
Serve immediately while bubbly and fresh!
