Ingredients
  

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • 4 slices crispy bacon crumbled
  • ½ cup sour cream
  • 2 tbsp chopped green onions
  • 1 tbsp chopped fresh parsley optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Scrub potatoes clean, then pierce them with a fork. Bake directly on the oven rack for 45–50 minutes until tender. Let cool slightly.
  • Cut each potato in half lengthwise and scoop out the flesh, leaving about ¼-inch of potato attached to the skin.
  • Brush the inside and outside of the potato skins with olive oil. Season with salt, pepper, garlic powder, and smoked paprika.
  • Place the skin cut-side down on a baking sheet and bake for 10 minutes. Flip them over and bake for another 5–7 minutes until crispy.
  • Sprinkle cheddar cheese and crumbled bacon inside each potato skin. Return to the oven for 5 minutes or until the cheese is melted and bubbly.
  • Top with sour cream, green onions, and parsley. Serve immediately while warm.

Notes

  • For a lighter version, use Greek yogurt instead of sour cream.
  • Swap cheddar for pepper jack if you want a spicy kick.
  • These can be made ahead; simply reheat at 375°F (190°C) for 10 minutes before serving.
  • Try adding diced jalapeños, sautéed mushrooms, or even pulled pork for a unique twist!
