- 4 large russet potatoes
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 1 cup shredded cheddar cheese
- 4 slices crispy bacon crumbled
- ½ cup sour cream
- 2 tbsp chopped green onions
- 1 tbsp chopped fresh parsley optional
Preheat oven to 400°F (200°C).
Scrub potatoes clean, then pierce them with a fork. Bake directly on the oven rack for 45–50 minutes until tender. Let cool slightly.
Cut each potato in half lengthwise and scoop out the flesh, leaving about ¼-inch of potato attached to the skin.
Brush the inside and outside of the potato skins with olive oil. Season with salt, pepper, garlic powder, and smoked paprika.
Place the skin cut-side down on a baking sheet and bake for 10 minutes. Flip them over and bake for another 5–7 minutes until crispy.
Sprinkle cheddar cheese and crumbled bacon inside each potato skin. Return to the oven for 5 minutes or until the cheese is melted and bubbly.
Top with sour cream, green onions, and parsley. Serve immediately while warm.
- For a lighter version, use Greek yogurt instead of sour cream.
- Swap cheddar for pepper jack if you want a spicy kick.
- These can be made ahead; simply reheat at 375°F (190°C) for 10 minutes before serving.
- Try adding diced jalapeños, sautéed mushrooms, or even pulled pork for a unique twist!
