Ingredients
  

  • 12 egg roll wrappers
  • 1 cup cooked corned beef finely chopped
  • 1 cup sauerkraut drained and patted dry
  • 1 cup Swiss cheese shredded
  • ¼ cup Thousand Island dressing plus extra for dipping
  • 1 teaspoon caraway seeds optional, for classic rye flavor
  • 1 egg for sealing wrappers
  • Oil for frying

Instructions
 

  • In a bowl, mix corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, and caraway seeds.
  • Lay an egg roll wrapper diagonally, place 2 tablespoons of filling in the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a beaten egg.
  • Heat oil to 350°F (175°C). Fry egg rolls for 2-3 minutes per side until golden brown. Drain on paper towels.
  • Enjoy hot with extra Thousand Island dressing for dipping!
