1/2 cup fresh or frozen raspberries 2 tbsp apple cider vinegar or balsamic vinegar for a richer flavor 1 tbsp honey or maple syrup adjust to taste 1/4 cup extra-virgin olive oil Salt and pepper to taste
In a blender or food processor, combine the raspberries, apple cider vinegar, and honey or maple syrup. Blend until smooth.
With the blender on low speed, slowly add the olive oil to emulsify the dressing until it’s well combined.
Season with salt and pepper to taste, and blend again briefly to incorporate.
