Ingredients
  

  • 4 slices of crusty sourdough or rustic bread
  • 4 oz Raclette cheese thinly sliced
  • 4-6 slices of smoked ham or roasted vegetables such as mushrooms, zucchini, or bell peppers
  • 2 tbsp butter softened
  • 1 tsp Dijon mustard or pickles for extra flavor Optional
  • Salt and black pepper to taste

Instructions
 

  • Spread softened butter on one side of each bread slice.
  • Place a layer of Raclette cheese on the unbuttered side of two slices. Add the smoked ham or roasted vegetables on top, then season with a pinch of salt and pepper if desired. Add an additional layer of cheese over the ham or veggies.
  • Place the remaining bread slices on top, buttered side facing out.
  • Heat a skillet or grill pan over medium heat. Place the sandwiches on the pan and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has fully melted.
  • Slice in half and enjoy warm. Serve with a side of pickles or a small salad, if desired.
