Sweet Potato Base
- 7 oz purple sweet potato peeled and chopped
- 1-2 tbsp sugar to taste
- 1 cups milk
- 1/4 tsp vanilla extract
- Ice cubes
Milk Foam Topping
- 1/2 cup cold milk whole milk or barista-style oat milk works best
- 1 tsp sugar or simple syrup Optional
Wash, peel, and slice the purple sweet potato. Boil in water for 10–12 minutes, or until soft.
Drain and let cool slightly.
Add the cooked sweet potato to a blender with 1 cups of milk, sugar, and vanilla extract
Blend until completely smooth and creamy.
Froth 1/2 cup cold milk using a milk frother, a handheld whisk, or by shaking it in a jar until thick and foamy.
For extra sweetness, add 1 tsp of sugar or syrup before frothing.
Fill two glasses with ice. Pour the blended purple sweet potato latte over the ice. Top with a thick layer of cold milk foam.
- Best served cold, but can be warmed by heating the milk if preferred.
- Use plant-based milk like oat, almond, or soy for a vegan version.
