Ingredients
  

Sweet Potato Base

  • 7 oz purple sweet potato peeled and chopped
  • 1-2 tbsp sugar to taste
  • 1 cups milk
  • 1/4 tsp vanilla extract
  • Ice cubes

  • 1/2 cup cold milk whole milk or barista-style oat milk works best

Instructions
 

  • Wash, peel, and slice the purple sweet potato. Boil in water for 10–12 minutes, or until soft.
  • Drain and let cool slightly.
  • Add the cooked sweet potato to a blender with 1 cups of milk, sugar, and vanilla extract
  • Blend until completely smooth and creamy.
  • Froth 1/2 cup cold milk using a milk frother, a handheld whisk, or by shaking it in a jar until thick and foamy.
  • For extra sweetness, add 1 tsp of sugar or syrup before frothing.
  • Fill two glasses with ice. Pour the blended purple sweet potato latte over the ice. Top with a thick layer of cold milk foam.
