Ingredients
  

  • 2 lbs potatoes Yukon Gold or Russet recommended
  • 1/2 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 4 tbsp unsalted butter
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh chives or parsley for garnish optional

Instructions
 

  • Peel and cut the potatoes into evenly sized chunks. In a large pot, cover the potatoes with cold water and bring to a boil. Add salt and cook for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
  • Drain the cooked potatoes and return them to the pot. Use a potato masher or ricer to mash the potatoes until smooth and creamy.
  • Stir in the mascarpone cheese, butter, and heavy cream. Mix until fully incorporated and creamy. Adjust the texture by adding more cream if needed.
  • Season with salt and freshly ground black pepper to taste. Garnish with fresh chives or parsley, if desired. Serve warm as a side dish to your favorite entrée.
