Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1-2 tablespoons finely chopped fresh jalapeño adjust based on heat preference
  • 1 teaspoon lime juice
  • Salt and pepper to taste
  • Paprika for garnish
  • Chopped fresh cilantro or green onions optional, for garnish

Instructions
 

  • Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let the eggs sit for 12-14 minutes.
  • Transfer the eggs to a bowl of ice water to cool for about 5 minutes.
  • Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Set the egg whites aside.
  • Mash the yolks with a fork and add the mayonnaise, Dijon mustard, chopped jalapeño, lime juice, salt, and pepper. Mix until smooth and creamy. Taste and adjust seasoning as needed.
  • Spoon or pipe the yolk mixture back into the egg whites.
  • Sprinkle with paprika and garnish with chopped cilantro or green onions if desired.
  • Arrange on a platter and enjoy!
