- 24 chocolate chip cookies store-bought or homemade
- 1 quart vanilla ice cream softened
- 1 cup red, white, and blue sprinkles
- 1/4 cup mini chocolate chips optional
- Parchment paper
Line a baking sheet with parchment paper. Lay out half of the cookies, flat side up.
Scoop about 1/4 cup of softened vanilla ice cream onto each cookie.
Top with another cookie and gently press to form a sandwich.
Roll the edges of each ice cream sandwich in the patriotic sprinkles (and mini chocolate chips if using) to fully coat the exposed ice cream.
Wrap each sandwich in parchment paper and place them on the baking sheet.
