Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 tablespoon fresh ginger grated
  • 2 medium carrots sliced
  • 2 celery stalks sliced
  • 6 cups chicken broth
  • 2 cups cooked chicken breast shredded
  • 1 cup egg noodles
  • 1 tablespoon soy sauce optional
  • 1 teaspoon sesame oil optional
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant and softened (about 3 minutes).
  • Stir in the carrots and celery, cooking for another 5 minutes.
  • Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes until the vegetables are tender.
  • Add the shredded chicken and noodles. Cook for another 8–10 minutes, or until the noodles are tender.
  • Stir in soy sauce and sesame oil, if using, and season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley or green onions.
