1 tablespoon olive oil 1 medium onion diced 3 garlic cloves minced 1 tablespoon fresh ginger grated 2 medium carrots sliced 2 celery stalks sliced 6 cups chicken broth 2 cups cooked chicken breast shredded 1 cup egg noodles 1 tablespoon soy sauce optional 1 teaspoon sesame oil optional Salt and pepper to taste Fresh parsley or green onions for garnish
Heat olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant and softened (about 3 minutes).
Stir in the carrots and celery, cooking for another 5 minutes.
Pour in the chicken broth and bring to a boil. Reduce the heat to a simmer and cook for 10 minutes until the vegetables are tender.
Add the shredded chicken and noodles. Cook for another 8–10 minutes, or until the noodles are tender.
Stir in soy sauce and sesame oil, if using, and season with salt and pepper to taste.
Serve hot, garnished with fresh parsley or green onions.
