Ingredients
  

  • 6 ripe peaches peeled and diced
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 12 egg roll wrappers
  • 2 tbsp melted butter
  • Vanilla ice cream optional, for serving

Instructions
 

  • In a bowl, mix diced peaches, granulated sugar, cinnamon, nutmeg, and lemon juice. Let it sit for 10 minutes to macerate.
  • Spoon about 2 tablespoons of peach filling onto each egg roll wrapper. Fold the sides of the wrapper over the filling and roll tightly, sealing the edges with water.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Place the prepared egg rolls on the parchment-lined baking sheet and brush them with melted butter.
  • Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  • Once baked, let them cool for a few minutes before serving.
  • Serve warm with a scoop of vanilla ice cream if desired.
