4 large tortillas 4 large eggs ½ cup milk 1 cup shredded cheddar cheese 1 cup cooked breakfast sausage or bacon, diced 1 cup diced potatoes or frozen hash browns ½ cup diced bell peppers ½ cup diced onions ¼ teaspoon salt ¼ teaspoon black pepper ¼ teaspoon garlic powder 1 tablespoon butter or oil
Heat a pan over medium heat with 1 tablespoon of butter or oil.
Add diced potatoes, bell peppers, and onions.
Cook for 7–10 minutes, stirring occasionally, until potatoes are golden and tender. Remove from pan and set aside.
In a bowl, whisk eggs with milk, salt, black pepper, and garlic powder.
Pour eggs into the same pan over medium heat and scramble until cooked through (about 3 minutes).
Warm tortillas in a dry pan for 10 seconds on each side.
Evenly divide the scrambled eggs, potatoes, cooked sausage (or bacon), and shredded cheese onto each tortilla.
Fold in the sides of the tortilla, then roll it up tightly from the bottom.
Place burritos seam-side down in the pan for 1–2 minutes to crisp up.
Eat immediately or wrap in foil for an easy grab-and-go meal.
Use whole wheat tortillas and turkey sausage for a heathier version.
