Ingredients
  

  • 4 large tortillas
  • 4 large eggs
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage or bacon, diced
  • 1 cup diced potatoes or frozen hash browns
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon butter or oil

Instructions
 

  • Heat a pan over medium heat with 1 tablespoon of butter or oil.
  • Add diced potatoes, bell peppers, and onions.
  • Cook for 7–10 minutes, stirring occasionally, until potatoes are golden and tender. Remove from pan and set aside.
  • In a bowl, whisk eggs with milk, salt, black pepper, and garlic powder.
  • Pour eggs into the same pan over medium heat and scramble until cooked through (about 3 minutes).
  • Warm tortillas in a dry pan for 10 seconds on each side.
  • Evenly divide the scrambled eggs, potatoes, cooked sausage (or bacon), and shredded cheese onto each tortilla.
  • Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  • Place burritos seam-side down in the pan for 1–2 minutes to crisp up.
  • Eat immediately or wrap in foil for an easy grab-and-go meal.

Notes

  • Use whole wheat tortillas and turkey sausage for a heathier version.
  • Add hot sauce or diced jalapeños to spice it up.
  • Freeze burritos individually and reheat in the microwave for a quick breakfast.
