Ingredients
  

  • 1/2 cup fresh blueberries
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions
 

  • In a blender or food processor, combine the blueberries, balsamic vinegar, olive oil, honey, and Dijon mustard.
  • Blend until smooth and creamy.
  • Taste, then season with salt and black pepper as desired.
  • If the vinaigrette is too thick, you can add a teaspoon of water to reach your desired consistency.
