Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 celery stalks chopped
  • 2 garlic cloves minced
  • 1 can (28-ounce) crushed tomatoes
  • 1 1/2 cups vegetable or chicken broth
  • 1/4 cup vodka optional
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon hot sauce adjust to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon horseradish optional, for extra heat
  • 1 teaspoon celery salt
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Celery stalks or lemon wedges for garnish (optional)

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and celery, and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute.
  • Add the crushed tomatoes, broth, vodka (if using), Worcestershire sauce, hot sauce, lemon juice, horseradish (if using), celery salt, and pepper. Bring to a simmer and cook for about 15-20 minutes to let the flavors meld together.
  • For a smoother texture, use an immersion blender to blend the soup until smooth. You can leave it chunky if you prefer more texture. (optional)
  • Taste and adjust seasoning. Serve hot, garnished with fresh parsley, and enjoy with optional celery stalks or lemon wedges on the side.
