Ingredients
  

  • 1 cup fresh strawberries hulled
  • 1 cup fresh blueberries
  • cup plain yogurt or Greek yogurt
  • tbsp honey or agave syrup adjust to taste
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice to brighten the flavor
  • 2 tbsp corn syrup prevents iciness

Instructions
 

  • In a blender, puree the strawberries with half of the honey, half of the yogurt, and half of the vanilla extract. Set aside.
  • Rinse the blender and puree the blueberries with ½ cup of yogurt and the remaining honey and vanilla extract.
  • Mix 1 tbsp of corn syrup into each berry mixture. This will help prevent the popsicles from getting icy and stuck in the mold.
  • Pour the strawberry mixture into the popsicle molds, filling them about a third.
  • Add a thin layer of plain yogurt
  • Finish with the blueberry mixture.
  • Gently tap the molds on the counter to remove any air bubbles.
  • Insert popsicle sticks and freeze for 4-6 hours or until solid.
  • To easily remove popsicles, run warm water over the outside of the mold for a few seconds.

Notes

  • Avoid using water-based liquids, as they can create ice crystals. The yogurt and corn syrup help keep the popsicles creamy.
  • Use raspberries instead of strawberries or add a hint of coconut milk for a tropical twist.
