Ingredients
  

  • 12 slices of baguette 1/2-inch thick
  • 1 tbsp olive oil
  • 200 g 7 oz beef tenderloin (or sirloin)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter
  • 60 g 2 oz blue cheese, crumbled
  • ¼ cup sour cream
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tbsp chopped chives for garnish
  • ½ tsp balsamic glaze optional

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Brush baguette slices with olive oil and bake for 8-10 minutes until golden and crispy.
  • Season beef with salt and pepper.
  • Heat butter in a skillet over medium-high heat. Sear the beef for 2-3 minutes per side for medium-rare (adjust as needed).
  • Let the beef rest for 5 minutes, then slice thinly.
  • In a small bowl, mix blue cheese, sour cream, Dijon mustard, and Worcestershire sauce until smooth.
  • Spread a layer of blue cheese mixture on each toasted baguette slice. Top with sliced beef. Garnish with chopped chives and drizzle with balsamic glaze if using.

Notes

  • For extra flavor, rub the baguette slices with a garlic clove before toasting.
  • You can substitute beef tenderloin with roast beef slices for a quicker version.
  • Blue cheese can be swapped for gorgonzola if you prefer a milder taste.
