Ingredients
  

  • 1 cup corn kernels fresh, canned, or frozen
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 1/4 cup milk
  • 1 large egg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon paprika optional
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly spray with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, cornmeal, baking powder, paprika, salt, and pepper.
  • In a separate bowl, beat the egg and milk together.
  • Combine the wet and dry ingredients, then fold in the corn kernels, Parmesan cheese, and green onions until just mixed.
  • Scoop small portions of the mixture onto the prepared baking sheet, flattening slightly to form fritters. Bake for 12–15 minutes on one side, then flip and bake for another 10 minutes, or until golden and crisp on the edges.
  • Serve warm with your favorite dip, such as sour cream or spicy aioli.
