Baileys Tiramisu

250 g (1 cup) mascarpone cheese 250 ml (1 cup) heavy cream 3 tbsp granulated sugar 2 large egg yolks 100 ml (⅓ cup + 1 tbsp) Baileys Irish Cream 200 ml (¾ cup + 2 tbsp) strong brewed espresso, cooled 2 tbsp coffee liqueur optional 200 g (20) ladyfinger biscuits 2 tbsp unsweetened cocoa powder Dark chocolate shavings for garnish, optional
In a mixing bowl, whisk the egg yolks with sugar until pale and creamy.
Add mascarpone cheese and 2 tbsp Baileys, then mix until smooth.
In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the mascarpone mixture gently to keep it airy.
In a shallow dish, combine espresso, coffee liqueur (if using), and the remaining Baileys.
Dip each ladyfinger quickly into the coffee mixture (don’t soak too much) and layer them in a serving dish.
Spread half of the mascarpone mixture over the ladyfingers.
Repeat with another layer of soaked ladyfingers and mascarpone mixture.
Cover and refrigerate for at least 5 hours or overnight for the best flavor.
Dust with cocoa powder and garnish with dark chocolate shavings before serving.
