Ingredients
  

  • 250 g (1 cup) mascarpone cheese
  • 250 ml (1 cup) heavy cream
  • 3 tbsp granulated sugar
  • 2 large egg yolks
  • 100 ml (⅓ cup + 1 tbsp) Baileys Irish Cream
  • 200 ml (¾ cup + 2 tbsp) strong brewed espresso, cooled
  • 2 tbsp coffee liqueur optional
  • 200 g (20) ladyfinger biscuits
  • 2 tbsp unsweetened cocoa powder
  • Dark chocolate shavings for garnish, optional

Instructions
 

  • In a mixing bowl, whisk the egg yolks with sugar until pale and creamy.
  • Add mascarpone cheese and 2 tbsp Baileys, then mix until smooth.
  • In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the mascarpone mixture gently to keep it airy.
  • In a shallow dish, combine espresso, coffee liqueur (if using), and the remaining Baileys.
  • Dip each ladyfinger quickly into the coffee mixture (don’t soak too much) and layer them in a serving dish.
  • Spread half of the mascarpone mixture over the ladyfingers.
  • Repeat with another layer of soaked ladyfingers and mascarpone mixture.
  • Cover and refrigerate for at least 5 hours or overnight for the best flavor.
  • Dust with cocoa powder and garnish with dark chocolate shavings before serving.
