- 1 ripe avocado
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or lime juice
- 1 small garlic clove minced
- 1/4 cup water adjust for desired consistency
- Salt and pepper to taste
- 1/2 teaspoon honey optional, for a touch of sweetness
Slice the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
To the avocado, add olive oil, lemon juice, minced garlic, water, and a pinch of salt and pepper. Blend until smooth.
If the dressing is too thick, add more water a tablespoon at a time until you reach your desired consistency.
Add honey, more salt, or pepper if needed. Blend again to combine.
Drizzle over salads, bowls, or use as a dip. Enjoy!
