Instructions
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, mix the eggs, milk, and vanilla extract.
Gradually combine the wet ingredients with the dry ingredients until smooth. Gently fold in the diced apples.
In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
Drop spoonfuls of batter into the hot oil, careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown. Remove and place on a plate lined with paper towels to drain excess oil.
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
Once the fritters are slightly cooled, dip each one into the glaze or drizzle the glaze over them. Let them set for a few minutes before serving.
