Ingredients
  

For the fritters

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 medium apples peeled, cored, and diced
  • Vegetable oil for frying

For the glaze

  • 1 1/4 cups powdered sugar
  • 3 tablespoons milk or as needed for desired consistency
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, mix the eggs, milk, and vanilla extract.
  • Gradually combine the wet ingredients with the dry ingredients until smooth. Gently fold in the diced apples.
  • In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
  • Drop spoonfuls of batter into the hot oil, careful not to overcrowd the pan. Fry for 2-3 minutes on each side or until golden brown. Remove and place on a plate lined with paper towels to drain excess oil.
  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  • Once the fritters are slightly cooled, dip each one into the glaze or drizzle the glaze over them. Let them set for a few minutes before serving.
