Pumpkin Pancakes Recipe

Pumpkin pancakes are a seasonal twist on classic pancakes. They’re infused with pumpkin puree and warm spices like cinnamon, nutmeg, and ginger. The pumpkin adds moisture, flavor, and a subtle sweetness, while the spices give a cozy, festive flavor. All create a warm, comforting dish.

Simple Pumpkin Pancakes for breakfast and brunch

Popular in fall, these pancakes are slightly denser than traditional pancakes but incredibly moist and aromatic. You can enjoy this breakfast with classic toppings like butter, maple syrup, maple-glazed pecans, or pumpkin seeds.

Whipped cream, fresh or sautéed fruits, such as apples or bananas, are also great choices. For extra flavor, consider toppings like toasted coconut, cinnamon butter, or salted caramel. The dish also goes well with savory sides like bacon or breakfast potatoes balance the sweetness.

You can complete the meal with spiced beverages such as pumpkin coffee creamer or pumpkin spice hot chocolate for a cozy fall breakfast.

Variations

Pumpkin pancakes have many variations. Here are some ideas you can try:

  1. Vegan Pancakes use plant-based milks like soy or almond, no eggs, and alternatives for oil such as applesauce or coconut oil. They are often sweetened with pure maple syrup and can be made whole grain, oil-free, or gluten-free.
  2. Buttermilk Pumpkin Pancakes incorporate buttermilk for a tangy richness that complements pumpkin.
  3. Flavored Additions include different ingredients to create different flavors, such as chocolate chips, diced apples (Apple Cinnamon), chopped pecans with praline topping (Pecan Praline), cream cheese swirls, or even coffee granules for a Pumpkin Spice Latte flavor. Other creative twists include Maple Bacon, Gingerbread spices, Pumpkin Cheesecake filling, and Chai Spiced versions with exotic spices.
  4. Pumpkin Spice Pancakes focus on the warm spices typical of pumpkin pie, like cinnamon, ginger, nutmeg, allspice, and cloves.
