Instructions
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, mix the milk, pumpkin puree, egg, melted butter, and vanilla.
Pour the wet mixture into the dry ingredients. Stir gently until just combined — don’t overmix.
Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
Pour 1/4 cup of batter for each pancake. Cook for 2–3 minutes until bubbles form and edges look set. Flip and cook for another 1–2 minutes.
Serve warm with maple syrup, butter, chopped nuts, or a sprinkle of cinnamon sugar.
Notes
Let pancakes cool completely, freeze in a zip bag, and reheat in a toaster.
