Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp brown sugar or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 3/4 cup milk any kind
  • 1/2 cup canned pumpkin puree
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1/2 tsp vanilla extract

Instructions
 

  • In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, mix the milk, pumpkin puree, egg, melted butter, and vanilla.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined — don’t overmix.
  • Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
  • Pour 1/4 cup of batter for each pancake. Cook for 2–3 minutes until bubbles form and edges look set. Flip and cook for another 1–2 minutes.
  • Serve warm with maple syrup, butter, chopped nuts, or a sprinkle of cinnamon sugar.

Notes

Let pancakes cool completely, freeze in a zip bag, and reheat in a toaster.
