Instructions

- Add celery and water to a blender. Add lemon juice if using.
- Blend until smooth.
- Pour through a fine mesh strainer or cheesecloth into a bowl or large glass. Press or squeeze to extract all the juice. Discard the pulp or save for other uses.
- Stir in ½ teaspoons of maple syrup or honey until fully dissolved.
- Chill and serve over ice.
