Ingredients
  

  • 2 cups watermelon rind green skin removed, white part finely chopped
  • 1 cup granulated sugar
  • 2 tbsp lemon juice freshly squeezed
  • 1/2 tsp ground ginger optional for spice
  • 1/2 cup water
  • Zest of 1 lemon

Instructions
 

  • Peel off the green outer skin of the watermelon rind. Chop the white part into small cubes.
  • In a saucepan, combine the chopped rind and water. Boil for 10 minutes until slightly tender. Drain.
  • Return the rind to the pan. Add sugar, lemon juice, lemon zest, and ginger (if using).
  • Simmer over medium-low heat for about 35–40 minutes, stirring occasionally, until the mixture thickens and turns golden.
  • For a smoother jam, use an immersion blender or regular blender to puree slightly. This step is optional
  • Let the jam cool. Transfer to sterilized jars. Keep refrigerated for up to 3 weeks.

Notes

  • You can reduce the sugar slightly if preferred, or substitute with honey or coconut sugar for variation.
  • Adding a cinnamon stick or star anise while simmering gives it a spiced twist.
