- 2 cups watermelon rind green skin removed, white part finely chopped
- 1 cup granulated sugar
- 2 tbsp lemon juice freshly squeezed
- 1/2 tsp ground ginger optional for spice
- 1/2 cup water
- Zest of 1 lemon
Peel off the green outer skin of the watermelon rind. Chop the white part into small cubes.
In a saucepan, combine the chopped rind and water. Boil for 10 minutes until slightly tender. Drain.
Return the rind to the pan. Add sugar, lemon juice, lemon zest, and ginger (if using).
Simmer over medium-low heat for about 35–40 minutes, stirring occasionally, until the mixture thickens and turns golden.
For a smoother jam, use an immersion blender or regular blender to puree slightly. This step is optional
Let the jam cool. Transfer to sterilized jars. Keep refrigerated for up to 3 weeks.
- You can reduce the sugar slightly if preferred, or substitute with honey or coconut sugar for variation.
- Adding a cinnamon stick or star anise while simmering gives it a spiced twist.
