Ingredients
  

  • 2 large rice paper sheets gluten-free, choose the thick type
  • 2 eggs
  • 2 tbsp mayonnaise
  • 2 tbsp chili sauce adjust to taste
  • ½ cup sausage or ground pork or grilled chicken
  • ¼ cup dried shrimp soaked and minced (optional)
  • ¼ cup green onions chopped
  • ¼ cup shredded cheese mozzarella or cheddar
  • Fried shallots optional, for topping

Instructions
 

  • In a small bowl, beat the eggs and mix with chopped green onions.
  • Place a non-stick pan on low heat (no oil needed).
  • Place one rice paper sheet on the pan. Let it crisp up for a few seconds.
  • Spread a thin layer evenly on the rice paper.
  • Sprinkle diced sausage, dried shrimp, and shredded cheese evenly.
  • Drizzle with mayonnaise and chili sauce.
  • Use a spatula to press the toppings gently. Cook for about 2-3 minutes until crispy and golden.
  • Remove from heat, cut into wedges, and enjoy!
