1 medium ripe tomato diced 3 tablespoons olive oil 1 tablespoon red wine vinegar or apple cider vinegar 1 clove garlic minced 1 teaspoon honey or maple syrup optional, for a touch of sweetness Salt and freshly ground black pepper to taste 1 tablespoon fresh basil or oregano chopped (optional)
