Ingredients
  

  • 2 oz apple brandy (or calvados)
  • 1 oz toffee liqueur (or butterscotch schnapps)
  • ¾ oz freshly squeezed lemon juice
  • ½ oz simple syrup (adjust to taste)
  • 1 egg white or 20 ml aquafaba for vegan version
  • Ice cubes
  • Apple slice or dehydrated apple wheel for garnish

Instructions
 

  • Add all ingredients (except ice) to a cocktail shaker. Shake hard for 15 seconds to whip the egg white.
  • Add ice and shake again for 15–20 seconds until well chilled and frothy.
  • Strain into a chilled coupe or rocks glass.
  • Garnish with an apple slice or dusting of nutmeg.

Notes

  • To make it lighter, reduce simple syrup or use sugar-free syrup.
  • For extra aroma, flame an apple peel over the glass before serving.
  • Use apple schnapps instead of brandy, butterscotch syrup if you don’t have liqueur.
