- 2 large sweet potatoes about 500g, peeled and diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 3 cups vegetable or chicken broth
- 1 cup coconut milk (or regular milk for creaminess)
- 1 tbsp olive oil
- 1/2 tsp ground cinnamon
- 1/4 tsp nutmeg optional
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 3–4 minutes. Add garlic and cook for another minute.
Add diced sweet potatoes, broth, cinnamon, nutmeg, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 15–20 minutes, until sweet potatoes are tender.
Remove from heat and carefully blend the soup with an immersion blender until smooth (or transfer to a blender in batches).
Stir in coconut milk and adjust seasoning as needed. Reheat gently if necessary.
Serve warm, garnished with parsley or chives.
