Ingredients
  

  • 2 large sweet potatoes about 500g, peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable or chicken broth
  • 1 cup coconut milk (or regular milk for creaminess)
  • 1 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg optional
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté onions until translucent, about 3–4 minutes. Add garlic and cook for another minute.
  • Add diced sweet potatoes, broth, cinnamon, nutmeg, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 15–20 minutes, until sweet potatoes are tender.
  • Remove from heat and carefully blend the soup with an immersion blender until smooth (or transfer to a blender in batches).
  • Stir in coconut milk and adjust seasoning as needed. Reheat gently if necessary.
  • Serve warm, garnished with parsley or chives.

Notes

  • For extra flavor, roast the sweet potatoes before cooking.
  • Add a pinch of cayenne for a subtle spicy kick.
  • Store in the fridge for up to 3 days or frezee for up to 2 months.
