- 2 cups fresh spinach leaves washed
- 1 medium cucumber peeled and chopped
- 1/2 lemon juiced
- 1/2 inch piece of fresh ginger
- 1/2 cup cold water
- 1/2 teaspoon maple syrup or honey (optional)
- Pinch of sea salt optional
- Ice cubes optional
Add spinach, cucumber, lemon juice, ginger, water, and optional honey and salt into a blender.
Blend until very smooth.
Strain through a fine mesh sieve or cheesecloth if you prefer a clear juice. (Optional)
Serve over ice if desired.
