Ingredients
  

  • 2 cups fresh spinach leaves washed
  • 1 medium cucumber peeled and chopped
  • 1/2 lemon juiced
  • 1/2 inch piece of fresh ginger
  • 1/2 cup cold water
  • 1/2 teaspoon maple syrup or honey (optional)
  • Pinch of sea salt optional
  • Ice cubes optional

Instructions
 

  • Add spinach, cucumber, lemon juice, ginger, water, and optional honey and salt into a blender.
  • Blend until very smooth.
  • Strain through a fine mesh sieve or cheesecloth if you prefer a clear juice. (Optional)
  • Serve over ice if desired.

Notes

  • The small amount of honey and pinch of salt help balance the earthy flavor of spinach and the mild bitterness of cucumber.
  • Increase the ginger slightly for more zing.
  • Store in an airtight container in the fridge for up to 24 hours, though it's best enjoyed fresh.
