Strain the apricot puree using a fine mesh sieve or cheesecloth to remove any pulp and obtain a smooth nectar. This step is optional
Return the strained nectar to the saucepan and add honey or sugar to sweeten, adjusting to your taste preference. Stir in lemon juice to enhance the flavor.
Simmer the mixture for an additional 5-7 minutes, allowing the flavors to meld.
Allow the apricot nectar to cool before transferring it to a glass jar or pitcher. Refrigerate until cold. Serve chilled, over ice if desired.
