Ingredients
  

  • 2 cups ripe apricots pitted and chopped
  • 1/2 cup water
  • 1/4 cup honey or sugar adjust to taste
  • 1 tbsp lemon juice

Instructions
 

  • In a saucepan, combine the chopped apricots with water.
  • Cook over medium heat until the apricots are soft and easily mashed with a fork. This typically takes about 10-15 minutes.
  • Allow the cooked apricots to cool slightly, then transfer them to a blender or food processor. Blend until you achieve a smooth puree.
  • Strain the apricot puree using a fine mesh sieve or cheesecloth to remove any pulp and obtain a smooth nectar. This step is optional
  • Return the strained nectar to the saucepan and add honey or sugar to sweeten, adjusting to your taste preference. Stir in lemon juice to enhance the flavor.
  • Simmer the mixture for an additional 5-7 minutes, allowing the flavors to meld.
  • Allow the apricot nectar to cool before transferring it to a glass jar or pitcher. Refrigerate until cold. Serve chilled, over ice if desired.

Notes

You can keep this Apricot Nectar Juice in the fridge for 5 days.
