For the filling
- 1 lb 450g ground lamb
- 1 small onion finely chopped
- 2 carrots diced
- 2 cloves garlic minced
- 1 cup frozen peas
- 1 tbsp tomato paste
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp all-purpose flour for thickening, optional
For the mashed potato topping
- 2 lbs 900g potatoes, peeled and cubed
- 3 tbsp butter
- ½ cup milk
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup shredded cheddar cheese optional, for extra flavor
Prepare the mashed potatoes:
Boil the potatoes in salted water for about 15 minutes until fork-tender.
Drain, then mash with butter, milk, salt, and pepper until smooth. Set aside.
Make the filling:
In a large skillet, cook the ground lamb over medium heat until browned. Drain excess fat if needed.
Add onion, carrots, and garlic. Cook for 5 minutes until softened.
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
Sprinkle flour over the mixture (if using) and stir well.
Pour in beef broth, bring to a simmer, and cook for 5 minutes until slightly thickened.
Stir in frozen peas and remove from heat.
Assemble the pie:
Preheat oven to 375°F (190°C).
Spread the lamb mixture evenly in a baking dish.
Top with mashed potatoes, spreading smoothly. Use a fork to create texture on top.
Sprinkle with cheddar cheese if desired.
Bake for 25 minutes or until golden brown.
Let it rest for 5 minutes before serving.
