Ingredients
  

  • 4 medium sweet potatoes (about 1.2 kg) peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme or rosemary
  • 1/2 teaspoon cumin optional, for warmth
  • 1/2 teaspoon salt adjust to taste
  • 1/4 teaspoon black pepper
  • Optional garnish: fresh parsley or chives

Instructions
 

  • Preheat oven to 200°C (400°F).
  • In a large bowl, combine olive oil, garlic, smoked paprika, thyme, cumin, salt, and pepper.
  • Toss the sweet potato cubes until evenly coated with the seasoning.
  • Spread them in a single layer on a parchment-lined baking sheet.
  • Roast for 30–35 minutes, flipping halfway through, until the edges are golden and crispy.
  • Serve warm, sprinkled with chopped parsley or chives for freshness.

Notes

  • Add a pinch of chili flakes or smoked chili powder for a spicy kick.
  • Works perfectly with roasted chicken, grilled fish, or as part of a veggie bowl.
