4 medium sweet potatoes (about 1.2 kg) peeled and cut into 1-inch cubes 2 tablespoons olive oil 3 garlic cloves minced 1 teaspoon smoked paprika 1 teaspoon dried thyme or rosemary 1/2 teaspoon cumin optional, for warmth 1/2 teaspoon salt adjust to taste 1/4 teaspoon black pepper Optional garnish: fresh parsley or chives
