Ingredients
  

  • 2 cans sardines drained, packed in olive oil for extra flavor
  • 4 slices of whole-grain or sourdough bread
  • 1 small lemon
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp capers optional
  • 1 small clove garlic finely minced
  • 1/4 cup fresh parsley chopped
  • Salt and black pepper to taste
  • 4 lettuce leaves or baby spinach
  • 1 medium tomato sliced

Instructions
 

  • In a bowl, mash the sardines with a fork. Add lemon juice, zest, mayonnaise, Dijon mustard, minced garlic, capers (if using), and parsley. Mix until combined. Season with salt and pepper to taste.
  • Lightly toast the bread slices for added crunch and flavor.
  • Spread the sardine mixture evenly on two slices of bread. Add lettuce leaves and tomato slices on top. Cover with the remaining slices of bread.
  • Slice the sandwiches in half and serve immediately.
