Instructions
In a bowl, mash the sardines with a fork. Add lemon juice, zest, mayonnaise, Dijon mustard, minced garlic, capers (if using), and parsley. Mix until combined. Season with salt and pepper to taste.
Lightly toast the bread slices for added crunch and flavor.
Spread the sardine mixture evenly on two slices of bread. Add lettuce leaves and tomato slices on top. Cover with the remaining slices of bread.
Slice the sandwiches in half and serve immediately.
