1 cup pumpkin purée unsweetened 1/4 cup brown sugar lightly packed 1 tsp pumpkin pie spice 1/2 tsp ground cinnamon optional for extra warmth 2 cups sparkling water or club soda chilled 1/2 tsp vanilla extract Ice cubes Whipped cream optional, for topping
Make the pumpkin syrup In a small saucepan, combine pumpkin purée, brown sugar, pumpkin pie spice, cinnamon, and 1/4 cup water.
Cook over medium heat for 3–4 minutes, stirring until sugar dissolves and mixture thickens slightly.
Remove from heat and stir in vanilla extract. Let cool for a few minutes.
Assemble the soda Add 2–3 tablespoons of the pumpkin syrup to a tall glass filled with ice.
Slowly pour in chilled sparkling water or club soda.
Stir gently to combine.
Top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice, if desired.
Serve immediately for maximum fizz.
