Ingredients
  

  • 1 cup pumpkin purée unsweetened
  • 1/4 cup brown sugar lightly packed
  • 1 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon optional for extra warmth
  • 2 cups sparkling water or club soda chilled
  • 1/2 tsp vanilla extract
  • Ice cubes
  • Whipped cream optional, for topping

Instructions
 

Make the pumpkin syrup

  • In a small saucepan, combine pumpkin purée, brown sugar, pumpkin pie spice, cinnamon, and 1/4 cup water.
  • Cook over medium heat for 3–4 minutes, stirring until sugar dissolves and mixture thickens slightly.
  • Remove from heat and stir in vanilla extract. Let cool for a few minutes.

Assemble the soda

  • Add 2–3 tablespoons of the pumpkin syrup to a tall glass filled with ice.
  • Slowly pour in chilled sparkling water or club soda.
  • Stir gently to combine.
  • Top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice, if desired.
  • Serve immediately for maximum fizz.
