Ingredients
  

  • 3 cups frozen pineapple chunks
  • ½ cup full-fat coconut cream
  • 2 tbsp powder sugar optional, adjust to taste
  • 1 tbsp lime juice
  • Pinch of salt
  • ¼ tsp xanthan gum

Instructions
 

  • Combine all ingredients in a blender.
  • Blend, scraping sides often, until completely smooth and thick like soft-serve. If the mixture becomes too thick, add 1 tsp coconut cream or pineapple juice at a time.
  • Once thick and creamy, transfer it into a large piping bag fitted with a large star tip.
  • Hold the piping bag vertically above your serving dish. Start piping from the center, moving in a circular motion, and gradually build up the swirl. Finish with a quick lift to create a peak.
  • Serve immediately.

Notes

  • If the mixture is too soft, place it in the freezer for about 10 minutes before piping.
  • If it’s too hard, let it sit at room temperature for a few minutes.
  • You can omit the xanthan gum. However, the texture is a very thick, well-blended smoothie rather than mimicking soft-serve.
