Blend, scraping sides often, until completely smooth and thick like soft-serve. If the mixture becomes too thick, add 1 tsp coconut cream or pineapple juice at a time.
Once thick and creamy, transfer it into a large piping bag fitted with a large star tip.
Hold the piping bag vertically above your serving dish. Start piping from the center, moving in a circular motion, and gradually build up the swirl. Finish with a quick lift to create a peak.
Serve immediately.
Notes
If the mixture is too soft, place it in the freezer for about 10 minutes before piping.
If it’s too hard, let it sit at room temperature for a few minutes.
You can omit the xanthan gum. However, the texture is a very thick, well-blended smoothie rather than mimicking soft-serve.
