Line a baking sheet with parchment paper or a silicone baking mat.
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring in between until fully smooth.
Gently fold the crushed Oreos into the melted white chocolate, leaving some to sprinkle on top for extra crunch.
In a separate bowl, melt the mint chocolate chips in the same way as the white chocolate. Drizzle this melted mint chocolate over the Oreo-white chocolate mixture.
Use a toothpick or a spatula to swirl the mint chocolate into the mixture. Optionally, add a few drops of peppermint extract for extra mint flavor. Sprinkle the reserved Oreo crumbs on top.
Place the bark in the fridge for 1-2 hours to harden completely.
Once fully set, break into irregular pieces and serve.
