1 cup (226g) unsalted butter, softened ½ cup (100g) granulated sugar 1 teaspoon vanilla extract 2 cups (250g) all-purpose flour ¼ teaspoon salt 2 tablespoons green food coloring (gel or liquid) 2 tablespoons green sprinkles or sanding sugar ½ cup mini chocolate chips optional
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, beat the butter and sugar until light and creamy.
Add vanilla extract and green food coloring, mixing well until the dough is evenly colored.
Gradually mix in the flour and salt until a dough forms.
Fold in green sprinkles and mini chocolate chips if using.
Roll the dough into a rectangle, about ½-inch thick, and cut into small bite-sized squares.
Place the bites on the prepared baking sheet, spacing them slightly apart. Bake for 10-12 minutes or until the edges are lightly golden.
Let cool completely before serving.
