Instructions
Preheat your oven to 375°F (190°C).
In a bowl, whisk together the olive oil, honey, lemon zest, lemon juice, minced garlic, soy sauce, salt, and pepper until well combined.
Place the pork in a large dish or resealable bag. Pour the marinade over the pork, ensuring it’s well-coated. Let it marinate for at least 30 minutes, or up to 4 hours in the fridge for more flavor.
Place the marinated pork in a roasting pan. Pour any remaining marinade over it and cover loosely with foil. Roast in the preheated oven for about 1 hour, then remove the foil and roast for an additional 20-30 minutes, or until the internal temperature reaches 145°F (63°C) and the glaze is golden brown.
Let the pork rest for 10 minutes before slicing. Garnish with fresh thyme or rosemary, if desired.
