A hearty, easy-to-make soup packed with kale, savory sausage, and tender vegetables. Perfect for a cozy weeknight dinner that’s healthy, affordable, and delicious.
1poundItalian sausage (mild or spicy, casings removed)
1medium oniondiced
2clovesgarlicminced
3medium carrotssliced
2celery stalkssliced
1teaspoondried thyme
1teaspoondried oregano
6cupschicken or vegetable broth
1can diced tomatoes
1bunch kalestems removed and leaves chopped
Salt and pepper to taste
Optional: grated Parmesan cheese for serving
Instructions
Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5–7 minutes). Remove excess grease if necessary.
Add onion, garlic, carrots, and celery to the pot. Cook 3–4 minutes until slightly softened.
Stir in thyme, oregano, broth, and diced tomatoes. Bring to a boil.
Reduce heat and simmer for 10 minutes until vegetables are tender.
Stir in chopped kale and cook for another 5 minutes until wilted.
Taste and adjust salt and pepper. Serve hot with optional Parmesan.
Notes
Use any sausage you like: pork, chicken, or turkey.
Frozen kale can be used if fresh kale is unavailable.
For a creamier version, add ½ cup milk or cream at the end.
