Ingredients
  

  • 4 large orange bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes drained
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Olive oil for sautéing

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds. Use a small paring knife to carve jack-o'-lantern faces into the sides of the peppers. Set aside.
  • In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until softened. Add the ground beef (or turkey) and cook until browned. Stir in the diced tomatoes, cooked rice, paprika, cumin, oregano, salt, and pepper. Cook for another 5-7 minutes until fully combined.
  • Fill each bell pepper with the meat and rice mixture. Top with shredded cheddar cheese.
  • Place the stuffed peppers in a baking dish. Cover loosely with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted.
  • Let the peppers cool slightly before serving. Enjoy your spooky and delicious Halloween-themed dinner!
