Ingredients
  

  • 8 oz cream cheese softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp butter softened
  • 1 cup sweetened shredded coconut
  • 2 tbsp cocoa powder for coating

Instructions
 

  • In a large mixing bowl, blend the softened cream cheese, butter, and vanilla extract until smooth and well-combined.
  • Gradually add powdered sugar, one cup at a time, mixing well between additions. Stir in cinnamon for flavor.
  • Once the mixture is thick and sticky, fold in the shredded coconut.
  • Use your hands to form small, round balls (about 1 inch in diameter) from the mixture. This should make approximately 24 candies.
  • Roll each candy in cocoa powder to give it a light coating, making it look like a potato.
  • Place the candies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
