8 oz cream cheese softened 4 cups powdered sugar 2 tsp vanilla extract 1 tsp ground cinnamon 2 tbsp butter softened 1 cup sweetened shredded coconut 2 tbsp cocoa powder for coating
In a large mixing bowl, blend the softened cream cheese, butter, and vanilla extract until smooth and well-combined.
Gradually add powdered sugar, one cup at a time, mixing well between additions. Stir in cinnamon for flavor.
Once the mixture is thick and sticky, fold in the shredded coconut.
Use your hands to form small, round balls (about 1 inch in diameter) from the mixture. This should make approximately 24 candies.
Roll each candy in cocoa powder to give it a light coating, making it look like a potato.
Place the candies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to allow them to firm up.
