4 medium russet potatoes scrubbed and thinly sliced 2 tbsp olive oil 1 tsp garlic powder 1 tsp onion powder ½ tsp paprika Salt & black pepper to taste 1 ½ cups shredded cheddar cheese ½ cup cooked bacon crumbled ½ cup sour cream 2 tbsp chopped chives ¼ cup sliced jalapeños optional
Set your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sliced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
Spread the potato slices in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway, until golden and crispy.
Sprinkle cheddar cheese and crumbled bacon over the crispy potatoes. Return to the oven for 5 minutes, or until the cheese melts.
Drizzle with sour cream, then sprinkle with chopped chives and jalapeños (if using). Serve warm and enjoy!
