Ingredients
  

  • 1 cup (240ml) Guinness stout
  • ½ cup (100g) granulated sugar
  • ¼ cup (30g) unsweetened cocoa powder
  • 2 tbsp cornstarch
  • ¼ tsp salt
  • 1 ¼ cups (300ml) whole milk
  • ½ cup (120ml) heavy cream
  • 4 oz (115g) dark chocolate (70% cocoa), chopped
  • 1 tsp vanilla extract
  • Whipped cream and chocolate shavings for garnish

Instructions
 

  • In a saucepan over medium heat, bring the Guinness to a simmer and reduce by half (about 5 minutes). Set aside.
  • In a separate saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  • Gradually add milk and heavy cream, whisking until smooth.
  • Heat over medium, stirring constantly, until the mixture begins to thicken.
  • Reduce heat to low and add the chopped chocolate, stirring until melted and smooth.
  • Stir in the reduced Guinness and vanilla extract, mixing until fully incorporated.
  • Pour into serving glasses or ramekins and let cool slightly. Refrigerate for at least 2 hours before serving.
  • Top with whipped cream and chocolate shavings before serving.
