- 1 cup (240ml) Guinness stout
- ½ cup (100g) granulated sugar
- ¼ cup (30g) unsweetened cocoa powder
- 2 tbsp cornstarch
- ¼ tsp salt
- 1 ¼ cups (300ml) whole milk
- ½ cup (120ml) heavy cream
- 4 oz (115g) dark chocolate (70% cocoa), chopped
- 1 tsp vanilla extract
- Whipped cream and chocolate shavings for garnish
In a saucepan over medium heat, bring the Guinness to a simmer and reduce by half (about 5 minutes). Set aside.
In a separate saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
Gradually add milk and heavy cream, whisking until smooth.
Heat over medium, stirring constantly, until the mixture begins to thicken.
Reduce heat to low and add the chopped chocolate, stirring until melted and smooth.
Stir in the reduced Guinness and vanilla extract, mixing until fully incorporated.
Pour into serving glasses or ramekins and let cool slightly. Refrigerate for at least 2 hours before serving.
Top with whipped cream and chocolate shavings before serving.
