Ingredients
  

  • 1/2 cup tahini homemade or store-bought
  • 1/4 cup lemon juice about 2 lemons
  • 1-2 cloves garlic minced
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup or honey optional, for sweetness
  • Salt to taste
  • 1 teaspoon cumin or paprika for additional flavor optional

Instructions
 

  • In a medium bowl, whisk together the tahini, lemon juice, minced garlic, water, olive oil, and optional sweetener.
  • Add salt to taste and optional spices if desired.
  • If the dressing is too thick, add more water, a tablespoon at a time, until you reach your desired consistency.
  • Whisk the mixture until smooth and creamy. For an even smoother consistency, you can blend the dressing in a blender or food processor.
