1 large carrot peeled and roughly chopped 2 tablespoons fresh ginger peeled and chopped 2 tablespoons rice vinegar 2 tablespoons vegetable oil like grapeseed or canola 1 tablespoon toasted sesame oil 1 tablespoon soy sauce 1 tablespoon maple syrup or honey 1 tablespoon lemon juice 1 garlic clove minced 2-3 tablespoons water to adjust consistency
Add all the ingredients (except water) to a blender or food processor.
Blend until smooth. If the dressing is too thick, gradually add water until you reach your desired consistency.
