Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup beer lager or ale
  • 1 cup whole milk
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper optional, for heat
  • 2 cups sharp cheddar cheese shredded
  • ½ cup Monterey Jack cheese shredded
  • Salt and black pepper to taste

Instructions
 

  • In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until slightly golden.
  • Slowly pour in the beer while whisking constantly, followed by the milk. Stir until smooth and slightly thickened.
  • Add the Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and cayenne pepper. Stir well.
  • Gradually add the shredded cheeses, stirring constantly until fully melted and smooth.
  • Taste and adjust with salt and black pepper if needed. Serve warm with pretzels, bread, or veggies.

Notes

You can use a lager, pale ale, or amber ale for a balanced flavor. For a stronger taste, go with stout or IPA. Avoid overly bitter or fruity beers.
Black beer (like stout, porter, or schwarzbier) works well if you want a deeper, roasted flavor. It adds a rich, malty depth but can be slightly bitter—best for those who enjoy bold flavors.
